Mixed Berry Compote

You can use this berry topping for many things, but a couple of my favorites are on top of this egg pancake, on top of this homemade yogurt, and on top of cheesecake. It’s made with 3 simple ingredients and comes together in minutes.

Use any berries you have on hand. A mixture of blackberries, strawberries, and blueberries is delicious and usually what we have in the freezer.

You may have leftovers with this recipe which is great. Keep it sealed in the refrigerator and pull it out for an easy topping.

Mixed Berry Compote

Ingredients
  

  • 4 cups frozen berries approximately
  • 1/3 cup sugar or 2/3 cup honey
  • 1/4 cup water
  • 1-2 tbsp flour

Instructions
 

  • Add all ingredients except flour to a pot and turn to high heat.
  • Once boiling, turn down to a simmer. Simmer for 2-3 minutes.
  • Gradually add 1-2 tablespoon of flour for thickness.
  • Blend with immersion blender, carefully as the liquid may be hot.
  • Add any leftover compote into a sealed jar and keep in fridge.
