Will this recipe work with all-purpose Einkorn flour?

Yes, the waffles will still be delicious and soft and crispy with all-purpose Einkorn, but you may have to add less liquid. I recommend starting with most of the liquid in the recipe and add liquid until you reach your desired consistency.

Einkorn Waffle Recipe

Servings 10 waffles or 6 large waffles

Ingredients
  

  • 4 large eggs, beaten slightly
  • 300 g fresh milled einkorn or spelt
  • 2 cups milk
  • 2/3 cup neutral oil
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2.5 tsp baking powder
  • 1 tsp baking soda

Pumpkin Spice Option – replace maple syrup and milk with 1 cup whole milk pumpkin spice creamer and 1 cup water. SO delicious!!!

Instructions
 

  • Preheat waffle iron.
  • Mix together flour, cinnamon, salt, baking soda, baking powder.
  • Mix eggs, milk, maple syrup, oil together.
  • Mix wet and dry ingredients together. Let sit about 5 minutes before cooking so the baking powder can activate.
  • Poor 2/3 cup batter onto waffle iron (more or less, depending on the size of your waffle iron)
