One Pot Mac and Cheese Recipe

Did you ever wish there was a healthier version of the processed boxed macaroni and cheese? Well, this one pot mac and cheese comes pretty close and I’d dare to say even better. So full of flavor but yet quick and easy to whip up in a single pot, even your kids can make this.

Quick and easy, delicious and creamy, you may not even go back to the box at all.

One Pot Mac and Cheese Recipe

Ingredients
  

  • 1 pound uncooked pasta (such as penne, elbow, shell) 454 g
  • 3 cups water
  • 1 tsp salt
  • 1 cup warmed milk additional 1/4 cup milk at a time for final cooking.
  • 1/2 cup sour cream
  • 1/4 tsp garlic powder
  • 8 ounces Grated Cheddar Cheese

Instructions
 

  • Place raw pasta in bowl and soak in water. Rinse well and drain.
  • In medium sauce pot, add water, raw pasta, and a pinch of salt. Heat the pot on medium heat to bring the mixture to a low simmer (do not boil).
  • Stir the pasta frequently to keep pasta from sticking together.
  • Once a low simmer is reached, add warmed milk. Add more milk (1/4 cup at a time) if the liquid is absorbed and pasta is still not cooked (which takes about 10 min), making sure there is still some milk remaining in the pot.
  • With some milk still remaining, mix in the cheese and stir until melted and creamy. Add in the sour cream, garlic powder, salt, and stir until evenly mixed into the macaroni.
  • Turn off heat and serve immediately.
  • Add bread crumbs if desired.
