This whole wheat French bread is the perfect accompaniment that comes together quickly and goes alongside your main dish. If you are looking for a homemade bread recipe, but don’t have the time for a sourdough loaf (our favorite), try this one.

Ingredients
- 1 cup room temperature water 340g
- 1 1/2 teaspoon active dry yeast
- 3 teaspoons brown sugar
- 1 1/2 teaspoon salt
- 1 2/3 cups whole-wheat flour 270g
- 1 1/8 cup or less bread or all-purpose flour 150g
Instructions
- Mix water, brown sugar, and flour. Let rest at least 15 minutes (or more) to allow whole grains to absorb water.
- Add yeast and salt and knead for 5 minutes.
- Cover dough with a clean cloth and let rise until 1/3 higher in size.
- Spray counter and hands with water and flatten bread with hands into a large rectangle. Stretch and roll up dough into a tight ball.
- Bench rest for 10 minutes. For a second time, flatten and roll dough into a ball, making surface tension.
- Preheat oven and stoneware to 450° and place loaf in a heavily flowered bannaton and place into the freezer.
- Once oven is preheated, flip dough onto parchment paper and place on preheated stoneware. Score. Add ice cubes under parchment paper or onto a baking sheet for the first 10 minutes (steam get helps the bread get a good rise.)
- Lower oven to 375° and bake bread for 25 minutes or until golden brown and internal temperature reaches 200 degrees. Remove bread from the sheet and let cool on a rack.
