Chewy Granola Bar Recipe

These are not your regular store-bought granola bars, but are filled with protein, omega-3s, minerals, and fiber. Healthy chewy granola bars are hard to find and very pricey, so I hope you enjoy this chewy granola bar recipe with simple ingredients and loaded with nutrition. Throw them together over the weekend and have a snack ready to grab on a busy day.

Storing chewy granola bars:

These granola bars hold up well even without refrigeration, but the honey can get alittle sticky when warm. The best way to store them is in the fridge. I recommend packing them in individual snack baggies so they are ready to grab on busy days.

Chewy Granola Bar Recipe

Ingredients
  

Wet Ingredients

  • 1 cup honey
  • 1/3 cup neutral oil
  • 1/4 cup brown sugar

  • 2/3 cup creamy peanut butter
  • 2 tsp vanilla extract
  • 1/4 tsp fine sea salt

Dry Ingredients

  • 1 cup shredded coconut
  • 1 cup chopped walnuts or peanuts
  • 4 cups gluten-free crispy rice cereal
  • 2 1/2 cups quick oats
  • 1 cup ground flax seed

Topping

  • 1/2 cup mini chocolate chips

Instructions
 

  • Cover a 15 X 10 cookie sheet with parchment paper.
  • In a large mixing bowl, combine dry mixture: oats, crisped rice cereal, coconut shredds, chopped peanuts, and ground flaxseed until well combined.
  • In a sauce pan heat honey, brown sugar, and oil over medium high until boiling, stirring constantly
  • Once it starts to boil, turn heat to low, and boil for 1 minute, stirring and making sure it doesn’t bubble over.
  • Take pan off the heat and stir in the peanut butter, salt, and vanilla until smooth. Let cool for 5-10 minutes.
  • Pour this wet mixture over the dry mixture. Mix very well. I use my kitchenaid mixer, but use anything you have, just make sure the dry and wet mixtures are combined well and sticking together.
  • Pour granola bar mixture onto cookie sheet, lined with parchment paper. Press with a flat spatula.
  • Add mini chocolate chips to the top when mixture is not too warm and press in with a flat spatula.
  • Allow to cool in the refrigerator.
  • Once cooled completely, cut into bars. I cut 6 bars across and 4 bars down making 24 bars total.
