Cover a 15 X 10 cookie sheet with parchment paper.
In a large mixing bowl, combine dry mixture: oats, crisped rice cereal, coconut shredds, chopped peanuts, and ground flaxseed until well combined.
In a sauce pan heat honey, brown sugar, and oil over medium high until boiling, stirring constantly
Once it starts to boil, turn heat to low, and boil for 1 minute, stirring and making sure it doesn’t bubble over.
Take pan off the heat and stir in the peanut butter, salt, and vanilla until smooth. Let cool for 5-10 minutes.
Pour this wet mixture over the dry mixture. Mix very well. I use my kitchenaid mixer, but use anything you have, just make sure the dry and wet mixtures are combined well and sticking together.
Pour granola bar mixture onto cookie sheet, lined with parchment paper. Press with a flat spatula.
Add mini chocolate chips to the top when mixture is not too warm and press in with a flat spatula.
Allow to cool in the refrigerator.
Once cooled completely, cut into bars. I cut 6 bars across and 4 bars down making 24 bars total.
