Water kefir Recipe

Water Kiefer is basically healthy soda. Billions of gut healthy probiotics, extremely low or no sugar, and the fizzy carbonation we all love in soda pop.

The flavor is lightly sweet from the sugar alcohols that are produced when kefir ferments or “eats” the sugar.

On the second day of fermenting you use fliptop bottles to create all those bubbles. If you love soda but not all the sugar, you may just love this healthy alternative! There are so many flavor combinations so find one you love.

Water Kefir

Half Gallon

Ingredients
  

Day 1

  • 1 cup kefir grains drained + rinsed
  • 6 cups filtered water
  • 1 tsp black strap molasses
  • 1/2 cup organic raw sugar

Day 2

  • 1 1/4 cups organic fruit juice

Instructions
 

Day 1

  • Drain and rinse kefir grains and add 1 cup of the grains to half-gallon jar.
  • Boil one cup of water in medium-sized pot. Take pot off burner.
  • Add sugar and stir until dissolved.
  • Add molasses and stir until dissolved.
  • Add rest of the water (cold).
  • Transfer to half-gallon jar (on top of the kefir grains)
  • Let sit at room temperature for 24 hours with fermenting lid on.

Day 2

  • Add 1/4 cup juice to 5 flip-top bottles.
  • Pour kefir water on top, making sure to leave out the kefir grains and leave some sugar water with the grains to store in the fridge for next time. See the link below for strainer lids I love for this.
  • Let bottles sit at room temperature for 24 hours.

Day 3

  • Refrigerate and enjoy once cold.

Notes

Important note: If you are using juice that has been refrigerated, warm it up to room temperature so that the fermentation does not take longer than 24 hours.

To store grains long term, keep them with alittle bit of the mother juice in the refrigerator for a few months.
