Broccoli salad

In the search of healthy bowls ideas for lunch, I had to make my grandma’s famous broccoli salad into one. It’s full of protein and nutrition. Loaded with broccoli, sunflower seeds, and cheese, this packs a punch of protein and nutrition.

If you would like, swap out the mayonnaise for light mayonnaise or use this homemade version instead for more nutritious whole food option.

Homemade mayonnaise

Add one large egg yolk on the bottom of the mason jar and 1/2 – 3/4 cup mild oil, ½ tbsp lemon juice, 1 tsp white wine vinegar, ¼ tsp Dijon mustard, ¼ tsp sea salt. Insert the Immersion blender, start at the bottom with the egg first and blend slowly upward for 10 seconds or until thick consistency.

Broccoli Salad Lunch Bowl

Ingredients
  

  • 2-3 large bunches of broccoli cut into bite-size pieces
  • 1/2 pound of bacon cooked and crumbled
  • 1/4 cup of red onions chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup shredded cheddar chesse optional

Dressing

  • 3/4 cup of mayonnaise light or homemade (see above)
  • 3/4 cup of sour cream
  • 2 tablespoons of white vinegar
  • 1/4 cup of sugar or sub 4 packets Stevia
  • 1/2 teaspoon sea salt

Instructions
 

  • Fry bacon and cut into small bite-size pieces.
  • Cut broccoli into small bite-sized pieces.
  • Add the rest of the ingredients.
  • Mix all the dressing ingredients together.
  • Pour dressing on top and mix until fully combined.
