Make the stir fry sauce
Toss cut up chicken pieces and a little bit of soy sauce until coated thoroughly. Then fry in one tablespoon of olive oil and remove from hot pan.
Add the veggies, another tablespoon of olive oil and add the veggies.
Fry for a few minutes until tender and still crispy then add sauce until simmering and a little thickened.
Add chicken back in and serve over rice.
