Lunch Bowl Bean Salad

Ingredients

bag Persian cucumbers
diced

container cherry tomatoes
sliced in half

bunch parsley
chopped

feta cheese

salami or pepperoni
chopped

red onion
finely minced

can of chickpeas
rinsed

can of white beans
rinsed

jar Kalamata olives
sliced

jar sliced banana peppers

grated Parmesan
Dressing
2
cloves
garlic
mashed

tablespoons
red wine vinegar

cup
olive oil
pinch
salt

teaspoon
Italian seasoning

tablespoons
juice of lemon
usually 1 lemon
Instructions
Add all ingredients to a bowl.
Mix dressing ingredients until frothy.
Pour dressing on top and mix until fully combined.
Keeps in the fridge for one week.
