Perfect Einkorn Pancakes

Ingredients
  

  • 330 g whole wheat Einkorn flour freshly milled
  • 1 Tbsp sugar 50g
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 475 grams whole milk
  • 2 eggs
  • 2 tsp vanilla extract 10g
  • 3 Tbsp melted and cooled coconut oil, butter or neutral oil 40g
  • 1/2 cup mini chocolate chips optional

Method
 

  1. In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt.
  2. In a separate bowl, whisk the eggs, and mix in the milk, butter, and vanilla.
  3. Stir the dry ingredients into the wet ingredients until everything is combined.
  4. Let the batter sit while the griddle preheats.
  5. Smear griddle with butter and drop batter on the griddle. Let cook until bubbles form on the surface, then flip and cook for another 1 to 1 1/2 minutes.
