Perfect Einkorn Pancakes

Ingredients
  

  • 330 g whole wheat Einkorn flour freshly milled
  • 1 Tbsp sugar 50g
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 475 grams whole milk
  • 2 eggs
  • 2 tsp vanilla extract 10g
  • 3 Tbsp melted and cooled coconut oil, butter or neutral oil 40g
  • 1/2 cup mini chocolate chips optional

Instructions
 

  • In a large bowl, stir together the flour, sugar, baking soda, baking powder, and salt.
  • In a separate bowl, whisk the eggs, and mix in the milk, butter, and vanilla.
  • Stir the dry ingredients into the wet ingredients until everything is combined.
  • Let the batter sit while the griddle preheats.
  • Smear griddle with butter and drop batter on the griddle. Let cook until bubbles form on the surface, then flip and cook for another 1 to 1 1/2 minutes.
